I got this answer from Mark at the Helpdesk:
"The best / simplest thing is to have the department chair send an email to the helpdesk stating that she has been a visiting faculty for the Fall and to please extend access to her account until so they can completed grading (or whatever else).

This will be passed to the account mangers, and they will act accordingly.‚Äč"
